Apricot Bread


This comes from my sweet daughter, Amanda


1 cup boiling water
1 1/2 cup dried apricots
1/2 tsp baking soda
2 eggs
2 3/4 cup flour
3 tsp baking powder
1 cup chopped nuts

1. Grease and flour 2 9 x 5 x 3 pans

2. Pour boiling water over apricots and let stand until tender - do not

3. Drain off water and save - if not 1 cup add water to make 1 cup

4. Coarsley chop apricots

5. Pour liquid into bowl - add soda, sugar, eggs - mix well

6. Add apricots, flour, baking powder and nuts - mix well

7. Divide batter - bake until toothpick comes out clean

Cooking time 45 min @ 350 degrees

8. Cool on racks
