Apricot Chicken

Ingredients: 

2 lbs boneless, skinless chicken thighs, quartered or cut into large chunks
2 onions, sliced
1 cup dried apricots quartered as best as possible
1 pkg onion soup mix
4 oz water


  1. Preheat oven to 400
  2. Place chicken in bottom of pan. 
  3. Cover wih onions & apricots. 
  4. Sprinkle onion soup mix over all. 
  5. Drizzle with water. 
  6. Cover with parchment paper. Then cover tightly with aluminum foil. 
  7. Roast for two hours. Don't open as it cooks. 
  8.
