Artichoke Frittata

Notes: 

This is a Pizza for anyone who ain’t into Pizza dough or too many carbs. I love carbs by the way, and this is in no way an attempt by me to detox or cool off on the starch, it’s just a groovy light supper if you happen to have a bit of a head from the night before.

I build this dish up in layers in a non-stick pan and whack it in the oven for 20minutes, leave it to cool and get stuck in – it keeps for a few days as well.

Ingredients: 

1 deep dish Frittata:
6 eggs
2 Tbs of double cream
6 Artichoke hearts – sliced, diced or whatever you fancy
1 red onion finely sliced
2 big handfuls of spinach
2 big waxy spuds, cooked, cooled and sliced
2 tomatoes, sliced into strips
Salt, Pepper, Cayenne pepper
Soft goats cheese (optional)
