Asian Salad

Notes: 

If there is likely to be some salad left over, remember not to add the noodles and nuts to all of the salad as they will become soggy in the fridge. Excellent served with crispy skin salmon.

Ingredients: 

1/2 Wombok
3 spring onions, finely sliced diagonally
1/2 bunch flat leaf parsley, washed and picked
1/2 bunch coriander, washed and picked
Cashews
Dried Noodles
1/2 long red chilli, finely sliced lengthways

DRESSING
2 tablespoons peanut oil
1 tablespoon castor sugar
30ml light soy sauce
30ml rice wine vinegar
1 teaspoon sesame oil


  1. For dressing, combine all ingredients in a small saucepan and heat gently until sugar dissolves. Set aside to cool.
  2. For salad, combine cabbage, spring onions, chilli and herbs in a large bowl. Only add the nuts and noodles when ready to serve as they will become soggy.
