Asian Vegetable Soup

Ingredients: 

2 (6-ounce) boneless, skinless chicken breasts
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 teaspoon olive oil
1 (5-ounce) package Japanese Curly Noodles (chunks soba)
1 bunch bok choy, stems and leaves chopped separately
4 carrots, shredded
2 tablespoons soy sauce
1/4 cup teriyaki sauce
2 scallions, chopped
2 cloves garlic, minced
1-1/2 teaspoons salt
1 teaspoon ground ginger
