Bacon, Scallion, and Swiss Cheese Muffins

Ingredients: 

1 large egg
1 cup(s) milk
1/3 cup(s) mayonnaise
2 1/3 cup(s) all-purpose baking mix
6 ounce(s) Canadian bacon, chopped
3 scallions, finely sliced
3/4 cup(s) (shredded ) Swiss cheese


 
  1. Preheat oven to 400 degrees F. Mist a 12-cup muffin pan with cooking spray or line with paper liners.
  2. Lightly beat egg in a large bowl. Add milk, mayonnaise and baking mix, and stir until moistened. Fold in bacon, scallions, and cheese.
  3. Spoon batter into prepared muffin pan, filling each cup two-thirds full.
  4. Bake 18 to 20 minutes, or until muffins are golden brown. Let cool slightly, then remove muffins from pan and serve warm.
