Bahamian Ham and Rice

Ingredients: 

1 cup Cooked Picnic Ham
1/2 Onion, diced
1/2 Green Pepper, diced
2 stalks Celery, diced
3 slices Bacon, diced
1 clove Garlic, crushed
1 tsp Thyme
1 can Chicken Broth
3/4 cup Rice, uncooked
1 cup Tomatoes, diced
Salt and pepper to taste


Start to fry dieced bacon in a skillet.  Add ham, onions, peppers, celery, garlic and thyme.  Cook until tender.   Stir in tomatoes and cook for 3 minutes.     Add in broth and rice.  Stir, reduce heat cover and cook for 25 mins or until rice is done.     Season to taste with salt and pepper.
