1 large eggplant, washed and dried
2 medium tomatoes
1 garlic clove, peeled
2-3 springs of fresh thyme
2 1/2 tbsp olive oil
1/2 lemon juice
Sea salt
Cracked black pepper
Extra olive oil for roasting
