Baked Spinach


3 lbs. fresh spinach
3½ tbsp. unsalted butter, divided
Salt and pepper
1½ tbsp. flour
1 cup stock (milk, broth, or cream)
¾ cup grated cheese, divided (Parmesan, Romano, Asiago, Gruyere, etc.)
2 tbsp. dry breadcrumbs (I use panko)
