Baked Sweet & Sour Pineapple Sriracha Tofu Nuggets

Ingredients: 

1 package extra-firm tofu
1/2 tsp. organic vegetable oil
2 cloves garlic, minced
2 tb. minced shallot or red onion
1/2 c. 100% pineapple juice
1/4 c. water or vegetable broth
2 tb. sriracha sauce (and more to taste)
1 tb. tomato paste
1 tb. white balsamic vinegar (or regular balsamic vinegar)
1/4 tsp. ground white pepper
2 tsp. nutritional yeast
1/4 c. fine cornmeal
1/4 c. brown rice flour (most other flours should work as a substitute)
1/4 tsp. salt
1/4 tsp. black pepper
1/8 tsp. garlic powder
