Banana Walnut Bread

Ingredients: 

Nonstick cooking spray
3 ripe bananas
1/2 cup egg substitute
3/4 cup Splenda
1/2 cup Smart Balance margarine
1 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp cream of tartar
1/4 cup shelled walnuts, crushed


1. Preheat oven to 350°F. Spray a 9 x 5 x 3 inch loaf pan with nonstick cooking spray.

2. Mash the bananas and egg substitute together by hand or electric mixer. Add Splenda and margarine, mixing by hand or electric mixer. Add remaining ingredients and blend well.

3. Pour into the loaf pan and bake for 50 minutes. When done, a toothpick inserted in the center will come out clean. Let cool for 10 minutes before turning it out. Let cool completely.

Makes 1 9-inch loaf
