Basil, Spinach, Tomato Quinoa

Notes: 

I had to kind of pick apart the shallots so they weren't in one clump in the quinoa

Ingredients: 

Heirloom Cherry Tomatoes (or whatever you like)
few handfuls of Spinach
5-7 large basil leaves chopped
1 Shallot
1 cup dry rinsed quinoa
1 1/2 cups chicken broth
2-4 Tbl dry white wine
salt
pepper


 

  1. Mix chicken broth, water and white wine with quinoa, bring to a boil and simmer covered until liquid is absorbed, salt and pepper to taste
  2. Thinly slice shallots and simmer in olive oil until translucent and a little brown- set aside
  3. Slice cherry tomatoes in half, sautee in pan with olive oil until they are soft and starting to fall apart
  4. Add spinach and chopped basil to tomatoes until wilted- set aside
  5. Add tomato mixture to quinoa (might not need all the quinoa), incorporate the shallots
