Beautiful sweet potato and chocolate pie

this is a lovely sweet potato and chocolate pie. It's vegan, gluten free and made with all natural ingredients. One not to be missed!

Ingredients: 

Crust
- 3/4 cup chickpea flour
- 3/4 cup rice flour
- 1/2 cup buckwheat flour
- 1/4cup arrowroot
- 40 ml olive oil
- 40 ml sunflower oil
- 80 ml water
- 3 tbsp rice syrup
- pinch of salt
FIlling
- 600 gr sweet potato
- 3/4 cup rice flour
-1/2 tsp vanilla powder
- 1/2 tsp salt
- 20 dates
- 6 tbsp rice syrup
- 5 big tbsp cacao powder
- 1/4 cup water
- 1/2 cup grounded almonds
- 50 gr chocolate without sugar (optional)


Crust
  1. Preheat oven at 180 C
  2. In a big bowl mix dry ingredients: chickpea flour, brown rice flour, buckwheat flour, arrowroot and salt.
  3. In a glass mix the oild, water and rice syrup.
  4. Add wet ingredients into the bowl with the dried ones and mix it well until you get a dough. It has to be kind of soft and a bit sticky. You don't need to knead a lot, just enough to get all the ingredients together in a ball.
  5. Extend the dough on an oiled baking dish, pinch it with a fork and bake it for 7 minutes.
Filling
  1. - Peel sweet potatoes, cut them in chunks and steam them for 20 minutes until they get soft. Let them cool down and blend them with dates, rice syrup, vanilla and water.
  2. - In a bowl mix grounded almonds, rice flour, cacao powder and salt and add the sweet potato mixture and chopped sugar free chocolate (if used). Mix it all.
  3. - Put this filling on top of the crust (once it's baked for 7 mins). Spread it well and bake it for 25-30 mins. To check if it's done pinch the pie with a knife, if it comes out clean then it's ready.
  4. - Sprinkle some cocoa powder on top and let it cool down before serving.
