Beef and Tomato Quinoa Macaroni


1 tbsp (store-bought or homemade)
1 small onion, diced
1 celery stalk, chopped
1 garlic clove, minced
600g (1-1/4lb) lean ground beef
1 can diced tomatoes
1 tbsp dried oregano
1 tsp Himalayan salt
1 tsp freshly ground black pepper
1/2 tsp chili pepper flakes
2½ cups (225g | 8oz) uncooked quinoa macaroni
2 cups baby spinach leaves, roughly chopped
Shaved Parmesan Cheese
