Beef, Bean and Egg Casserole

Ingredients: 

1/2 teaspoon hot chilli powder
Pinch Coriander Powder
Cumin seeds
2 cloves
1 Cardamom pod
1/8 teaspoon poppy seed
1/8 teaspoon mustard seed
1 pinch turmeric
2 chopped cloves of garlic
1 /4 inch chopped piece of ginger
1 large chopped onion
500g diced casserole beef
1 1/4 cup of basmati rice
1 large diced carrot
1/4 red chopped capsicum
1/4 green chopped capsicum
Handful of chapped green beanettes
Some pre soaked black beans
5 whole eggs and 2 egg whites, beaten
2 cabana, cut into pieces
Handful of 4 leaf vegetables (greens)


  1. Heat oil in cast iron skillet at low heat
  2. Add chill powder, cumin seeds, cloves, cardamom, poppy seed and mustard seed, tumeric
  3. Stir fry for a while
  4. Add garlic and ginger
  5. Stir fry for a while
  6. Add onion and turn up heat to medium
  7. After about a minute, add a quarter cup of water
  8. Stir fry until semi translucent
  9. Add beef and turn heat to high
  10. Stir fry beef for 1-2 mins
  11. Add rice and stir fry among the onions
  12. Add 2 cups of water and turn heat down to medium
  13. Let cook for 5 mins
  14. Preheat oven to 190 degrees celsius
  15. Add carrots, capsicum, beans, beanettes and stir in
  16. After 2-3 mins, add beaten eggs
  17. Add cabana
  18. Sprinkle greens onto top
  19. After 2-3 mins, cover casserole dish and leave for 2-3 mins
  20. Put casserole into oven and reduce heat to 150 degrees celsius
  21. Leave in oven for 50 mins, then turn off oven leave in oven for 10-15 mins
  22. Serve
