Beef: Italian Braised Beef with Root Vegetables/

Ingredients: 

3 lb rump roast
Kosher salt and freshly ground black pepper
3 T olive oil
1 carrot, cut into 1-inch chunks
1 small celery root, peeled, cut into 1-inch chunks
1 onion, coarsely chopped
2 cloves garlic, smashed
1 C red wine
2 C Yia Yia's Sunday Sauce, recipe follows
2 bay leaves, preferably fresh
1 1/2 lb dried rigatoni, for serving

YIA YIA'S SUNDAY SAUCE:
1/4 C olive oil
1 large Spanish onion, finely diced
1 T kosher salt, or more as needed
6 cloves garlic, sliced
2 cans (28 oz ea)San Marzano tomatoes, with juice
2 lb meaty beef bones
1 C dry white wine
1 T fresh oregano leaves
1 T crushed red pepper flakes, optional
1/4 tsp freshly ground black pepper
1 bay leaf
