Beer Cheese Dip w/Pull Apart Pretzel Rolls

Ingredients: 

Pretzel Rolls
1 1/2 cups warm water
2 1/4 teaspoons (1 packet) active dry yeast
2 teaspoons granulated sugar
4 1/2 cups all-purpose flour
1 1/2 teaspoons Kosher salt
1/4 cup unsalted butter, melted and let cool
1/4 cup baking soda, for baking solution
8 cups water, for baking solution
1 whole egg, lightly beaten, for brushing
Kosher salt, for topping

Dip
1 8 oz package cream cheese, at room temperature
1 teaspoon ranch seasoning packet
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterrey Jack cheese
1/3 cup beer of your choice
1 green onion, chopped, to garnish (optional)
