Beer Cheese Soup

Ingredients: 

1 Tbsp Butter
1 Onion, Chopped
2 Carrots, Chopped
2 Celery Sticks, Chopped
2 Cloves Garlic, Minced
4 Tbsp Flour
1 Cup Wisconsin Beer (any nice pilsner or lager will do)
4 Cups Broth
1/2 Cup Half & Half
2 Cups Wisconsin Cheddar, Shredded
1 Tbsp Dijon Mustard
1 tsp Worcestershire Sauce
1/4 tsp Pepper
1/8 tsp Red Pepper Flakes
Salt to Taste
