Belgian Waffles (Nancy Johnson)

1 pkg yeast
2 c milk
4 eggs, separated
1 t vanilla
2.5 c flour
1/2 t salt
1 T sugar
1/2 c butter

Directions:   - yeast in milk and warm on stovetop - soften butter (melted, but not hot) - separate and beat egg whites until stiff - combine milk, butter, yolkes - add flour, sugar, vanilla, salt and mix - fold in whites - let rise ~1 hour (may double in size)
