Bernaise Sauce

Ingredients: 

1/4 cup butter
1 tsp minced shallots
1 tbsp. white wine vinegar
2 egg yolks - beaten
2 tbsp. heavy cream (substitute half and half)
1 1/2 tsp lemon juice
1 tsp tarragon (prefer fresh)
1 tsp fresh parsley
1 pinch pepper


melt butter in warm pan over double boiler
add onion and vinegar
whisk in eggs until thickened
add cream, continued mixing
add lemon juice and other ingredients and continue whisking until all incorporated and sauce is warm and thick
do not overheat - if sauce begins to separate, remove from heat and continue to whisk until smooth
serve immediately
