Best Blueberry Pie from Cooks Illustrated

6 cup fresh blueberries
1 Granny smith, peeled and grated with box grater
2 tsp. lemon juice
1/4 c. sugar
2 T instant tapioca ground
2 T butter cut in 1/4" pieces
1 egg beat with 1 tsp water

  1. Adjust rack to lowest spot, preheat to 400
  2. Heat 3 cups  mashed berries over medium heat in saucepan for about 8 minutes
  3. Place grated apple in paper towel and dry. Add to cooked berries.  Add remaining uncooked berries, lemon juice, sugar, tapioca, and salt (pinch). Mix and place in pie dish. Dot with butter
  4. Place pie in oven. Reduce heat to 350 and bake 30 minutes.
