Biltong

Ingredients: 

1kg beef
70g fine salt
4 tbsp brown sugar
4 tbsp coriander, coarsely ground
4 tbsp black pepper, ground
red wine vinegar/apple vinegar
warm water


  1. Cut beef into 3-4cm strips along the natural lines
  2. Mix salt, sugar, peppar and coriander in a bowl
  3. Rub the beef in the spice mixture
  4. Layer the meat in a box and spray vinegar over each layer. Also spray vinegar before the first layer of meat.
  5. Let it rest for ~12hrs
  6. Mix vinegar and water in a bowl
  7. Remove the meat from the marinade and dip it into the vinegar mixture to rinse it from the salt.
  8. Hang it up
