Bite-Size Coconut Cream Pie

Ingredients: 

2 1/2 tablespoons cornstarch
1/2 cup sugar
1/8 teaspoon salt
1 cup milk
2/3 cup cream
2 egg yolks
1 tablespoons butter
1/2 teaspoon vanilla
2/3 cup shredded coconut, divided (I use sweetened)
1 batch of pie crust (see below)
stabilized whipped cream (see below) or 1 cup heavy cream whipped with 2 tablespoons powdered sugar
