Black Bean Dip


Another recipe from the newspaper-so, so yummy. If you don't have a medium or hot salsa, add a little salsa and chili powder.


2 tsp extra virgin olive oil
1/2 medium onion, diced
2-3 clove garlic-whole
1- 1.5 oz can black beans, preferably low sodium, drained and rinsed
2 Tbs fresh lime juice
1/4 tsp cumin
1/2 tsp chili powder
2 Tsp cilantro, coarsely chopped
1/4 cup hot salsa
Hawaiian salt and ground pepper to taste.

  1. In a medium saucepan, heat the oil over a medium heat.
  2. Saute the onion until translucent
  3. Add the garlic and cook for an additional minute
  4. Place beans in a food processor
  5. Add the onion mixture and remaining ingredients adn process to desired consistency.
  6. Serve with raw vegtable and baked tortilla chips
  7. Servings - 4
