Black Bean Enchiladas Vegan

Ingredients: 

2 Tablespoons grapeseed oil
1/2 onion, chopped
1 red bell pepper, seeded and chopped
1 teaspoon chili powder
1 teaspoon cumin
1/4 teaspoon red pepper flakes
2 can black beans, drained and rinsed
2 canned chipotle peppers (I substituted 2 fresh serrano peppers, seeded and chopped)
1 cup diced tomatoes
salt and pepper to taste
12 corn tortillas
1/2 cup shredded vegan cheese
2 Tablespoons chopped fresh cilantro for garnish
Fresh salsa for serving
