Blackened Salmon & Mango Salsa

Notes: 

Only blacken one side, otherwise flavor too overpowering.

Cook for less than 4 minutes on each side to avoid overcooking.

salmon:

2 salmon filets

3 tbsp olive oil

1 tsp minced garlic

1 tsp sea salt

1 tsp onion powder

1 tsp oregano

1 tsp chili powder

1 tsp roasted red pepper flakes

1 tsp black pepper

1 tsp lemon pepper

(keep in mind, you can use any spices/mixtures you already have, these are just the ones i had on hand!)

heat 2 tbsp of the olive oil to medium heat in a skillet.  mix all  dry ingredients together in a bowl.  take 1 tbsp of olive oil and rub on salmon.  place each salmon in the bowl with the dry rub mixture and coat salmon until completely covered.  cook salmon on skillet for about 4 minutes of each side until the samlon creates a nice crust.

 

salsa:

1 large mango, peeled and diced

2 avocados, diced

2 small tomatoes, diced

1/4 cup red onion, chopped

1 small jalapeño, chopped

1 tsp lime juice

salt and pepper

dice all vegetable ingredients into bite size pieces (jalapeños should be diced very small) and mix together well.  add lime juice, salt and pepper and you have a salsa to serve on top of the salmon!
