2 T maple syrup
1 t vanilla
3/4 cup almond milk
3/4 cup warm water
1 cup blueberries plus more for glaze
Oil for skillet
Glaze: 3/4 cup blueberries processed with bananas
Coconut and blueberries for garnish
Preheat oven to 250
Stir dry ingredients
Stir wet and add wet to dry
Whisk until no clumps remain, add milk if necessary
Heat skillet to med-low and add oil
Pour 1/4 cup batter and smooth out with spoon
Cook until bubbles form
Transfer to baking sheet in oven to keep warm
Blend banana with 1/4 cup blueberries to make glaze
Slice some bananas to make pancake stacks
Top pancake stack with glaze coconut and blueberries
