500gr minced meat
350gr mushrooms, chopped
1 carrot, finely diced
1 onion, finely diced
2 celery sticks, finely chopped
2 garlic cloves, finely chopped
2 oregano sprigs
100gr tomato paste
500ml stock
1 can diced tomatoes
100ml pouring cream (optional)
2 tsp red wine vinegar
cooked spaghetti or other pasta
finely grated parmesan to serve
heat olive oil in large saucepan over medium-high heat, add minced meat and season to taste, increase heat to high and cook until liquid evaporates and meat browns.
add carrot, onion, celery, mushroom, garlic and herbs and cook until vegetables are tender (10-15 min)
add tomato paste, canned tomatoes & stock, reduce to low heat and simmer until very tender and liquid is reduced to a sauce (1 hour or so)
remove from heat, add vinegar and cream, season to taste and toss through pasta.
serve immediately wit plenty of finely grated parmesan
