Bolognese Sauce

3 cans of tomatoes should be about right.

Ingredients: 

6tablespoons evoo

3small onions minced

3carrots minced

3celery stalks

1lb minced bacon

1.5lb sausage

1.5lb beef

2.25cup dry white wine

18large tomatoes

3cups stock

3cups cream


Saute onion, celery, carrots, and bacon with evoo till tender over med heat.

Add beef and sausage. Cook till no longer red. Add wine and raise heat a littlebit. Cook off most of the liquid.

Add tomatoes and stock. Turn heat to low. After about an hour season with salt andpepper. Cook another hour till much of the liquid is gone.

Add cream and cook another 15 – 30 minutes.
