Ingredients: 

Vegan bounty or mounds bars (makes 5)

For the sugar syrup:
1/4 cup sugar
1/2 cup water

Combine sugar and water in a small saucepan. Bring to a boil and whisk constantly until the sugar is dissolved. Boil over high heat for five minutes. Set aside to cool.
1 cup lightly toasted shredded dried coconut
3 tablespoons soy milk
1/4 cup sugar syrup
1 tablespoon coconut oil
2 tablespoons flour
1 pinch salt

100 g (3.5 oz) good quality bittersweet chocolate, chopped
