3 tablespoons on rum/bourbon
2 tablespoons low sodium soy sauce
1 tablespoon peeled fresh ginger
1 tablespoon fresh lime juice
3 garlic cloves, minced
1/4 teaspoon pepper
4 (6 oz) skinless salmon fillets
Cooking spray
1/4 cup thinly sliced green onions
1 tablespoon sesame seeds
Combine first 7 ingredients in a large zip-top plastic bag. Add fish to bag, seal. Marinate in refrigerator for at least an hour and a half. Turn occasionally.
Heat a large nonstick skillet over medium to high heat. Coat pan with cooking spray. Add fish and marinade to pan; cook fish 4 minutes on each side or until fish flakes easily when tested with a fork. Remove from skillet top with onions and sesame seeds.
