Broccoli and Cheddar Gougères

Notes: 

Made simple by just spooning the dough onto a parchment lined cookie sheet instead of putting it into a pastry bag. These aren’t supposed to be Frenchy-fancy, but rather simple and homey. If they don’t puff into perfect little rounds, don’t stress it. As you can see, mine went kind of flat, but they’re still delicious.

Ingredients: 

1 stick (8 tablespoons)
1 cup unbleached all-purpose flour
1 cup water
1 teaspoon sugar
1/2 teaspoon kosher salt
4 eggs
1/4 cup sharp cheddar cheese cut into 1/16 inch pieces
4-5 five steamed broccoli florets, salted and chopped in very small pieces
