Ingredients (serves 6)
300g loaf ciabatta bread
1 garlic clove, peeled, halved lengthways
125g chargrilled eggplant, chopped
250g grape tomatoes, chopped
12 (120g) cherry bocconcini, torn
2 teaspoons finely chopped fresh rosemary leaves
1/4 cup chopped fresh basil leaves
2 teaspoons olive oil
small fresh basil leaves, to serve
