Butter Chicken

Prepare without chicken to use as vegetarian sauce for cauliflower

Ingredients: 

3 or 4 chicken breasts, diced
olive oil for searing
1 can tomato paste
1 can coconut milk
Spice mix: tandori masala, cumin, tumeric, cayenne, paprika, salt, pepper


  1. Combine spice mix as desired
  2. Coat chicken cubes in olive oil and toss in spice mix
  3. Sear seasoned chicken in hot pan
  4. Add can of cocunut milk and tomato paste to chicken
  5. Bring to a boil, reduce heat, and simmer for 15-20 minutes until sauce reduces
  6. Serve with jasmine rice
