Buttery Brown Sugar Roasted Butternut Squash

This is the Barefoot Contessa/Ina Garten's method of pan roasting butternut squash and is quite excellent. I halved the recipe for the two of us and the serving size is dead on as there was just a little left over. I baked for the full 55 minutes and it becomes golden brown and a bit sticky/caramelized so I was glad I spread my baking sheet with nonstick foil. If I made the full recipe I might choose to make this in 2 pans so as not to crowd the squash. *YUM*

Ingredients: 

2 medium butternut squash (about 5 pounds total)
1/2 cup melted and cooled
1/4 cup light brown sugar, packed
1 teaspoon salt
1/2 to 1 teaspoon fresh ground black pepper
