Caramelised Onion Tart

Ingredients: 

WHOLEMEAL SHORTCRUST PASTRY
250g of wholemeal (whole wheat) flour
180g of cold butter
1 egg yolk
2 tbs of chilled water
FILLING:
3 large onions, peeled and chopped
1 tbsp of balsamic vinegar
1 tbsp of brown sugar
1 tbs of butter
150g of strong cheddar cheese, grated
2 eggs plus 1 egg yolk
150 ml of cream
50ml of milk
3 tsp of thyme leaves, picked
salt and pepper to taste
