Carbonara Sauce

Notes: 

I like to use a veg peeler against a chunk of Parmesan to make thin shavings for garnish. Serves 6.

Ingredients: 

9 slices bacon, chopped
1 tbsp butter
3/4 cup 35% cream
1/2 cup grated Parmesan
4 egg yolks
salt
fresh ground pepper
shaved Parmesan


  1. In a large frying pan saute bacon till soft, add butter and saute until bacon is crisp. 
  2. Transfer bacon to paper towels and drain. reserve drippings.
  3. in a medium bowl, whisk together the cream, cheese, egg yolks and 2 tbsp of drippings until blended.
  4. Drain pasta, return to pot and pour cream mixture over pasta, cook over medium low heat, stirring constantly, approx 4 minutes until the sauce cooks and coats the pasta. Do not boil.
  5. Mix in the bacon and season with salt and generous amounts of pepper.
  6. Garnish with Parmesan and more pepper. Enjoy
