1 cup brown sugar
3 tsp cinnamon powder
2 tsp baking powder
2 tsp baking soda
1 tsp salt
4 eggs
1 and 1/4 cups oil
2 tsp vanilla essence
Frosting :
Cream cheese 2 cups
Butter 1 cup
Brown sugar 1/4 cup
In a bowl mix together dry ingredients flour, baking soda and powder, cinnamon powder salt.
In a different bowl or container whisk egg, white and brown sugar, vanilla and oil together until combined
Combine dry and wet ingredients whisk together and add carrots. Place in a baking tray or mold lined with baking paper or buttered. Bake for 45 mins or until firm and passes toothpick test.
In a mixer add cubed cream cheese and cubed soft butter and brown sugar. Mix until smooth, creamy and spreadable.
Take out cake base and cool for 20 mins before adding frosting. Decorate to desired looks. Serve.
