Carrot cake (nutless and no pineapple)

Ingredients: 

2 cups sugar
2 tsp. baking soda
1 cup Crisco oil (vegetable or Canola)
3 cups packed grated carrots
2 cups flour
1 tsp. salt
4 eggs
2 tsp. cinnamon
1/2 cup raisins


  1.  
    • Beat sugar and eggs. Add dry ingredients and carrots. Add oil; mix well. Bake in a greased and floured 9×13″ pan at 350 *F for 1 hour, until toothpick comes out clean.
    • Cream Cheese Icing
    • 8 oz softened cream cheese (room temp)
    • 2 cups icing sugar
    • 1/2 cup butter

    • 2 tsp. vanilla
    • Beat until smooth and then ice cooled carrot cake.
