Cashew Chicken

Ingredients: 

• 3 Maple Leaf Prime Naturally® Boneless Skinless, cut into bite-size pieces
• Salt and pepper
• 2 tbsp (30 mL) Oil, divided
• 2 Red peppers, chopped
• 2 Onions, chopped
• 1/2 cup (125 mL) Roasted cashews
• 3 Green onions, minced

Sauce
• 1/2 cup (125 mL) Chicken broth
• 1 tbsp (15 mL) Sriracha sauce
• 2 tbsp (30 mL) Dry garlic sauce
• 1 tbsp (15 mL) Rice wine vinegar
• 2 tsp (10 mL) Cornstarch


  1. SEASON chicken with salt and pepper. Stir fry chicken in 1 tbsp (15 mL) oil in a hot pan or wok for 8-10 minutes or until golden brown and the internal temperature reaches 165˚F (74˚C). Remove from the pan and set aside.   HEAT remaining oil in the same pan. Add peppers and onion, stir fry for 3-4 minutes or until vegetables are tender crisp. Add chicken back to the pan.   COMBINE all ingredients for the sauce in a small bowl and whisk until smooth. Pour over stir fry in pan and bring to a boil. Reduce heat and add cashews, simmer 2 minutes or until the sauce is thickened.  

    SERVE garnished with green onions
