Ingredients: 

Whole Chicken breast
Ortega Chiles – whole
Monterey Jack Cheese
Crackers – Townhouse Multigrain


Split chicken so you can stuff with cheese and peppers. Pound chicken, set aside. Grind crackers. Coat chicken with crackers. Layer 2” x 4” pieces of cheese in chicken. Put chile on top of cheese and fold chicken. Top with another chile and more cheese. Use toothpicks to hold chicken in place, if necessary. Place in greased baking dish and bake at 375 degrees for 35 – 45 minutes or until done. Serve with Spanish rice and beans.
