Chalupa

Ingredients: 

3 lb pork roast
1 lb pinto beans
2 cloves chopped garlic
2 T chili powder
1 T ground cumin
1 t oregano
1 large can green chiles, chopped
1 T salt
lettuce, avocado, tomatoes, onion, shredded cheese, salsa


  1. Trim off fat, wash the beans and combine all ingredients in large pot.
  2. Cover with water.
  3. cook covered, over low heat, adding water as needed.
  4. After 6 hrs cooking time remove bones and break up meat.
  5. Continue to cook, uncovered until thickened.
  6. Serve burro style on a large warm flour tortilla.
  7. Or serve on tostada shells topped as desired.
