Cheddar & Chive Biscuits

Ingredients: 

2 cups all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (leave out if you use salted butter)
1 stick (8 Tbsp.) COLD unsalted butter, cut into 8 pieces
1/2 cup sharp cheddar cheese, grated
2 Tbsp. fresh chives, thinly sliced
3/4 cup buttermilk*
