3/4 cup sugar
1/4 cup melted butter
1/4 teaspoon cinnamon
2 - 8 ounce packages cream cheese
1 teaspoon vanilla
1 cup sugar
5 egg yolks
2 tablespoons lemon juice
1/4 teaspoon salt
2 cups sour cream
5 egg whites
Combine crust ingredients and press into springform pan. Set aside.
Combine cream cheese, vanilla, sugar, egg yolks, lemon juice and salt. Beat until smooth. Add sour cream. Beat egg white until stiff but not dry. Fold into mixture. Bake 1 hour at 350 degrees. Turn oven off and leave cake in oven 1 hour. Remove from oven and let cool on rack 1 hour. Remove from pan and refrigerate 2 hours.
