Ingredients: 

1/2 cup=1/4 pound shortening- Crisco, or sweet unsalted butter, margarine
1 cup sugar
3 eggs separated
1 tsp vanilla (pure)
1 1/2 cups of flour
3 tsp baking powder
8 oz bottle of cherries without stems ( separate juice and cherries)see step 3
Milk
9 inch square pan greased and floured


1. Cream sugar and shortening
2. Add egg yolks 1 at a time and vanilla
3. Add alternately cherry juice and milk (3/4 liquid juice) with baking powder/ flour
Don't overbeat, beat until mixed
4. Fold dice fine cherries into batter ( flour, sugar, shortening, vanilla)
5. Beat egg whites not stiff, not dry , until peak until just hold shape
6. Fold egg whites into batter
7.put batter in the greased flour square pan
8. Bake at 375 for 45 minutes
