Cheryl & Co. Chocolate Peppermint Cookies

Ingredients: 

1 6-oz pkg semi-sweet chocolate chips
1 1/2 C flour
1 t baking powder
1/2 t salt
1/2 C shortening
1/2 C sugar
1/2 C packed brown sugar
1 egg
1 t vanilla extract
2 T milk

Frosting:
2 1/2 C powdered sugar
1/4 C butter, softened
3 T milk
1/2 t peppermint extract


  1. Place 1/2 chocolate chips in double boiler; once melted, set aside to cool.
  2. Combine flour, baking powder, and salt; set aside.
  3. Cream shortening; gradually add sugars, beating well at medium speec. Add melted chocolate, egg, and vanilla; beat well. Stir in milk. Gradually add flour mixture and mix well. Stir in remaining chocolate chips.
  4. Drop dough by heaping spoonfuls onto lightly greased cookie sheets. Bake 10-12 min at 250.
  5. After allowing cookies to cool, mix all frosting ingredients together and spread over cookies. Finish with crushed peppermint pieces.
