Chevre Pound Cake

Ingredients: 

1/2 pound goat cheese or cream cheese, softened
1 1/2 cups unsalted butter, softened
2 cups sugar
1/8 teaspoons salt
1 1/2 teaspoons lemon extract
6 eggs
3 cups white flour


Preheat oven to 325 degrees.

Lightly butter and flour a 10 inch tabe pan.

Blend cheese and butter with electric mixer, or beat vigorously with whisk.  Beat in sugar, salt, and lemon extract until mixture is very light.  Add eggs one at a time.  Beat until batter is light and fluffy.

Gently fold in flour.  Blend until ingredients are incorported. Pour mixture into the prepared pan.  Bake 1 hour and 15 minutes.  

Invert on a cooling rack thoroughly before serving.  Serve with whipped cream cheese and brandied blueberries.
