1 cup diced onion
1 cup diced celery
1 cup diced carrots
2 cloves of garlic, minced
1 teaspoon fresh thyme
salt and pepper
1/4 cup all-purpose flour
2 cups chicken broth
4 cups half and half
2 cups cooked chicken, cubed or shredded
1 pound gnocchi, prepared according to package directions
2-3 cups baby spinach, roughly chopped
