Chicken Cashew Casserole

Notes: 

An old favorite that we made with canned chicken, but of course leftover chicken would do even better.

Ingredients: 

2 5 oz cans chicken or 1 1/2 cups of leftover chicken
1 cup celery finely chopped
1/2 cup onion finely chopped
1 cup roasted cashews whole or halves
1 cup Chinese chow mien noodles
1 cup Chinese chow mien noodles for topping
1/2 cup +/- half & half
2 10 oz cans cream of mushroom soup
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper


  1. In a large bowl combine all ingredients except half & hal and soup.
  2. Mix well then add half & half and soup should be semi thick.
  3. Pour ingredients into a greased casserole dish
  4. Top with 1 cup chow mein noodles
  5. Bake at 350 for 40 minutes
  6. Let stand 10 minutes before serving
