Chicken with Cashews

Ingredients: 

4 chicken breasts, skinless cut into cubes
1 medium onion, diced
3 cups sliced mushrooms
1 cup uncooked grain of choice, prepared
2 teaspoons ground ginger
3 chicken bouillon cubes or 3 teaspoons granules
1 1/2 cup boiling water
2 cups brocolli pieces 1 cup cashew nuts
salt and pepper and soy sauce to taste
carrot shavings or parsely for garnish


  1. Preheat ovento 375 degrees F.
  2. In a large baking dish, add onion, chicken, and one crushed bouillon cube.
  3. Cover and microwave on medium-high &0 percent power) for five minutes, stirring once.
  4. Add mushrooms, rice,boiling water,ginger,and remaining bouillon cubes (crushed) into the same dish.
  5. Cover and bake in the oven for 30 minutes.
  6. Stir and add broccoli. Make sure the rice is covered with liquid.
  7. Bake another 10 minutes.
  8. If the vegetables are done to your liking,remove from the oven and allow to stand for a few minutes, so the moisture can be absorbed.
  9. Stir in 1/2 cup of the cashews, salt, pepper, and soy sauce.
  10. Place remaining cashews on top and put under boiler (without cover) to brown the top.
  11. Add carrot shavings or parsely for garnish and serve.
